Like I said in yesterday’s post, Paul’s parents were supposed to come to dinner last night. I had the menu planned out– chicken tagine with apricots and almonds, and a side of garlic roasted asparagus. But then they cancelled. I still made the meal, because it’s Paul’s favorite, but now we have leftovers! Which means I don’t have to cook tomorrow!
Chicken tagine with apricots and almonds–chicken cooked with onion, chicken broth, apricots, almonds, cinnamon, and honey and served over whole wheat couscous; side dish–garlic roasted asparagus. Wine: Chenin Blanc (can’t remember the brand)–a good dry wine with a light taste and a very floral scent; it would be a very tasty summer wine. Table runner courtesy of Mrs. Erin. : )
